Last week H and M contacted the catering company and said that they wanted to do a tasting for their grand opening ceremony at bayshore mall. I presented them with pumpkin whoopie pies, mini tiramisu’s, maple bacon doughnuts, and salted maple ganache tarts.

A very trendy local company put in a request last week for a hipster themed menu, naturally they wanted everything to be in canning jars labeled with hipster phrases and sayings. The menu consisted of three very simple yet delicious things; Chocolate dipped pretzels, Homer Simpson doughnuts, and banana s’mores with chili ganache a layer of streusel, and marshmallow topping.

Recently I took a pastry chef position at a local catering company called tulips and maple. One of the first challenges of working there was a completely kosher and dairy free dessert menu. Keeping with the season I decided on a trio dessert consisting of; chocolate torte with a raspberry coulis, lime sorbetto in a thyme sirop, and white wine poached pears with a smooth caramel. I’m happy to say that the bride and groom loved it. Simple and easy.
